Breakfast of Champions

With Harper's picky eating, I am always excited when I find something she likes. I was on wholesometoddlerfood.com a few weeks ago and found a pancake recipe that sounded easy and tasty. I now make them every Sunday evening, so she can have them for the following week. She absolutely loves them, and since I use the no-sugar applesauce, they are good for her too! I just thought I would pass along the recipe in case you are wanting something new for breakfast for your kiddo. Enjoy!

Applesauce Pancakes
1 cup flour –
1/4 teaspoon salt –
1 1/2 teaspoons baking powder
1 tablespoon melted butter –
1/2 cup milk –
1 beaten egg
1/2 teaspoon vanilla –
1 1/4 cups applesauce

Sift flour, salt and baking powder into a medium mixing bowl. Combine butter, milk and egg. Stir into dry ingredients. Add vanilla and applesauce; beat well. Spoon batter into a hot, well greased griddle.

do you just refrigerate them or do you freeze them and then dethaw?
